The alcohol is gently removed from the Cero wines by low pressure vacuum distillation. The flavours and aromas of the wine are not harmed as temperatures are only around 30 °C. So, by using very gentle methods, the alcohol is removed without affecting the quality or structure of the wine, and the fruity character remains intact. Contrary to many other alcohol free products that often contain a high level of added sugar, the Cero wines want to preserve the real taste of wine as much as possible.
