Sparkling wine has many names. In Germany it is called Sekt, in Italy it is known as Spumante and Spain produces Cava. Like champagne, it is fermented a second time in the bottle and is classified as brut, dry sparkling. Demi-sec is medium dry and sec is medium sweet.
